I had a sudden vision at the farmers market as I beheld the trays and trays of perfect, jewel-like strawberries. I would make jam. And I would layer that jam into sweet breakfast rolls and bake them until golden. And then I would smear those rolls with sweet cream cheese frosting.
I know what you're thinking: why on earth would anyone ever want to roast a strawberry? Strawberries are pretty amazing as is, why roast them? Well, yes. I agree with you. Strawberries are amazing - especially when they're perfectly in season and you can get huge, juicy British ones (or ones from wherever you're from!).

If a June night could talk, it would probably boast it invented romance. - Bern Williams Oh sweet, sweet summer. I have missed you dearly. I have longed for you for months, and finally you are here, as glorious as I remember you to be.
If brunch had a season it would be spring. People brunch for Easter. People brunch for Mother's Day. Brunch is where it's at once the weather starts to warm up. Especially if you can brunch outside. Personally I'm an equal opportunity bruncher and like to brunch year round. Late morning (sleep in!)

Made this last night for dinner, using paprika instead of the special chili powder. We loved it! Was not too spicy at all, and we actually left the chicken marinating for a full day. You have inspired us to fry chicken more often. This is my new favorite thing to make with boneless, skinless chicken thighs.
They're like cinnamon rolls... on tea. I was going to write on steroids, but that's so overused and it didn't really make sense because they're not buffed up versions of cinnamon rolls. They're just different, with more of a tea/nutty flavor. If you've had matcha flavored treats, you know what I'm talking about.

I love Tex-Mex food & have been making my killer Mexican lasagna, for about 20 years now. I also often make simple casseroles from the broken tortilla chips my daughter rejects (she is a bit of a Prima Donna & snubs the broken crumbs).
