Perfect to keep the cold away with a little spicy kick! Serves 6 peel from ½ orange 2 inches fresh ginger 4 cups apple cider 15 black peppercorns 2 rosemary stalks Cut off all the white meat of the orange peel and cut it into strips. Peel the ginger and thinly slice.

For the Spiced Cider Concentrate: In a medium saucepan, combine cider, cinnamon, allspice, cloves and black pepper. Bring to a boil then reduce heat to a simmer. Keep at a simmer, uncovered, until reduced by 3/4, and consistency is viscous like maple syrup, about 2 hours. Strain and let cool to room temperature.
