When the angel on my left shoulder and the devil on my right start bickering about wanting cake, it's often time to bake a healthier version. Apple makes a great filling because it adds both natural moisture and sweetness, two challenges of lower fat and lower sugar pastries.
Which came first, the pumpkin or the pan? Well, truthfully, the pan. I saw this Wilton Dimensions mini pumpkin pan, and with my pumpkin obsession, knew I had to have it. Once I had it, though, I had to decide what type of cakes to bake in it.
School may be back in session here in Colorado but summer is not yet over- you will not find pumpkin recipes here on my site in August! Of all the cakes I love to bake, I love pound cakes the most.
