Virgin Mango Lime Margarita - Self Proclaimed Foodie
This non-alcoholic kid friendly Virgin Mango Lime Margarita takes only minutes to make and is full of tangy sweet fruit that blends up perfectly smooth. This drink sure was a tasty treat. I made it for a few different reasons: 1) Cinco de Mayo is coming up and I love any excuse to make a margarita.

I have been on such a frappuccino kick lately. Like, it's getting ridiculous (and expensive). But I am such a marketer's dream come true and will buy any new flavored frappe available. Birthday cake? Had to try... and recreated it HERE. Java Chip? An old favorite. Caramel Coconut - remember that one?

Brunchiladas + Mimosaritas
I love enchiladas. So much so, that I'd like them for breakfast filled with eggs and chorizo. I'm all Dr. Suess about them. Please give them to me topped with salsa verde, out on the town, at the picnic table, for dinner, for breakfast, with leftovers, with newovers, topped with quickly whisked chili powder enchilada sauce, filled with BBQ, topped with gouda, topped with goat cheese.

Simple Citrus and Coconut Cocktail
It was 90 degrees today. I feel bad for friends that are still talking about snowfall, waiting for spring when Vegas is feeling like summertime. There have been nectarines and cherries at the farmers markets already, and weather like this makes me want to sit outside, stick my feet in the kiddy pool and sip on a light refreshing cocktail like this simple citrus and coconut cocktail.

Goodness it's HOT lately! It's the kind of hot where I don't even want to go to the pool, and would rather sit inside by the air conditioner instead. I've been getting by with lots of ice and cold drinks!
