One of my favorite things about warm weather is that it makes a wonderful excuse for fruity cocktail sipping. There's nothing that fills my heart with more joy than soaking in the sun with a sweet (and buzz-inducing) drink in my hand. Speaking of hearts, doesn't that one strawberry slice almost look heart-shaped?

efore I was tall enough to see over and into the ice cream case at the drug store my very favorite flavor was strawberry ice cream. I remember the ritual very well because going out for ice cream was so rare and such a treasure my eyes widen now just thinking about it.
I have a new favorite word: FLOATSICLE. It just sounds so good. So summery. Like I'm floating in one those lazy rivers that winds around a waterpark or a massive hotel and is filled with germs and bacteria but it's way too much fun to be bothered by that so I continue to float on in the center of a some giant neon pink donut with a umbrella studded beverage in hand, reeking of Lovespell because I doused myself in it even before swimming.
These Grown-Up Ice Pops, made with fresh carrot and orange juice are what I've been living on for the last couple of weeks. It has been so hot here and these refreshing, sugar-free, nutritious popsicles are incredibly restorative and cooling. When balanced right, fresh orange juice and carrot juice need no added sugar to taste delicious.
Combine milk, coconut milk, cream, lemongrass, ginger, and 1/2 cup water in a medium saucepan. Scrape in seeds from vanilla bean; add bean. Bring to a boil; remove from heat, cover, and let steep for 15 minutes.
