I have been making some version of this recipe for years, originally using canned creamed corn. Once I switched to fresh corn, I found the crunch that was needed for this creamy side dish. Pairing the corn with fresh basil from the garden is a classic summer combo.
My microwave is haunted. No, it really is. When I heat up anything, and then close the door after I've taken the food or coffee out of it, it starts up again, but only for a few seconds, like maybe six total, and then stops.
Somewhere down the line I picked up this habit of "loading" my drinks with fruit and herbs. I could probably link this on my mother for exposing me to sangria at such an early age. We are a huge fan of blueberry muffins at our house; usually a dozen muffins only lasts us through breakfast! I'm willing Spring to come early around here so I thought I'd add some lemon to my favorite muffin recipe. We'll see if it works! In my mind, Springtime and lemon just go together.
